Paleo Banana Bread Mug Muffin

Ingredients

  • 1/2 banana (the spottier, the better)
  • 2 tbsp coconut flour
  • 1 tsp ground flax seed (or can use another tsp coconut flour)
  • 1 egg
  • 1/4 tsp baking powder
  • cinnamon (to taste)
  • 4-5 tbsp water (or enough to make your consistency match the picture... see above!)

Instructions

  • Lightly grease mug or ramekin (can use butter, coconut oil, avocado oil, etc.)
  • Mash banana in a separate bowl. Add the rest of the ingredients and mix well.
  • Pour batter into mug.
  • Microwave for two minutes or until fully cooked through.
  • I always add toppings! This time, I used almond butter and dark chocolate chips :)

Notes

*VEGAN option - sub flax egg for egg. Consistency may be slightly different. Head to my Instagram, and see my highlight titled "flax egg" for a step by step tutorial on how to make a flax egg. 
**option to add sweetener of choice! Most of the time, I don't even need a sweetener with this recipe but I have tried honey, maple syrup, coconut sugar, and stevia and they're all delicious!
