Healthy Sugar Cookie Truffles (Gluten Free, Vegan)

Ingredients

cup
cashew butter
(any nut/seed butter. see details in post)

maple syrup

vanilla extract
1/4
tsp
almond extract
1/3
cup
vanilla protein powder

tbsp
coconut flour
sprinkle
sea salt
Chocolate Coating:
3/4
cup
white chocolate chips
1
tsp
coconut oil
sprinkles
(optional)
Instructions
Mix all ingredients (except chocolate chip & coconut oil) in a bowl until a dough forms.
Roll the dough into cookie dough balls and place on a parchment paper-lined plate or tray. Place in the freezer for at least 1-2 hours.
Melt white chocolate chips and coconut oil in the microwave in 20 second intervals, stirring between each (or can use double boiler method).
Dip each sugar cookie truffle into melted white chocolate. Top with sprinkles if you wish and stick back in the freezer for 30 min to set. Enjoy!
