These healthy sugar cookie truffles are gluten free, vegan, low sugar, and high protein. Made with simple, clean ingredients, and packed with protein. A parchment lined plate is golden brown with white truffles spread out on top. Each round truffle is coated in thick white chocolate and has red, white, and green sprinkles on top for Christmas. One has a bite taken out of it to show the soft, smooth, creamy texture of the inside.

Healthy Sugar Cookie Truffles (Gluten Free, Vegan)

Ingredients

  • 1/2 cup cashew butter (any nut/seed butter. see details in post)
  • 3 tbsp maple syrup
  • 1/2 tsp vanilla extract
  • 1/4 tsp almond extract
  • 1/3 cup vanilla protein powder
  • 1 tbsp coconut flour
  • sprinkle sea salt

Chocolate Coating:

  • 3/4 cup white chocolate chips
  • 1 tsp coconut oil
  • sprinkles (optional)

Instructions

  • Mix all ingredients (except chocolate chip & coconut oil) in a bowl until a dough forms.
  • Roll the dough into cookie dough balls and place on a parchment paper-lined plate or tray. Place in the freezer for at least 1-2 hours.
  • Melt white chocolate chips and coconut oil in the microwave in 20 second intervals, stirring between each (or can use double boiler method).
  • Dip each sugar cookie truffle into melted white chocolate. Top with sprinkles if you wish and stick back in the freezer for 30 min to set. Enjoy!
