Single-Serve Apple Poptart

Ingredients

  • 1/3 cup oat flour
  • 1 tbsp maple syrup
  • 1 tbsp coconut oil (melted)
  • 1 pinch salt
  • 1/8 tsp baking soda
  • 1 small apple

Optional icing: 1 tbsp powdered sugar with a few drops non-dairy milk

    Instructions

    • Preheat oven to 350F and line a baking sheet with parchment paper.
    • Add all ingredients to a bowl and mix well. Roll into a ball and split into 2 equal parts.
    • On the parchment paper, form each dough ball into a square. On one square, form a crust around the edges.
    • Heat apples and cinnamon with a splash of water over stovetop until softened. Mash with a potato masher or fork.
    • Add the apple mixture to the dough square with the crust. Carefully place the other square of dough on top. Using a fork, go along the edges of the crust to “seal” the poptart.
    • Bake for 15 mins or until edges startto slightly brown. Let cool completely.

    Optional to add icing: mix powdered sugar with non-dairy milk
