Single-Serve Hot Cocoa Cookie

Ingredients

  • 1/4 cup gluten-free flour
  • 2 tbsp cashew butter (or any nut / seed butter)
  • 2 tbsp sweetener
  • 1 heaping tbsp cacao / cocoa powder
  • 3-4 tbsp milk of choice
  • pinch sea salt
  • 1/4 tsp baking powder

Optional: melted chocolate, marshmallows, crushed candy canes

    Instructions

    • Preheat oven to 350F and line a baking sheet with parchment paper.
    • Add all ingredients to a small bowl and mix well.
    • Add dough to parchment paper and form into a cookie shape (it will be wet/sticky so dip your fingers in water first if it’s sticking to your hands).
    •  Bake 15 ish minutes. Let cool completely and add melted chocolate, marshmallows, and crushed candy canes
