The Best Ever Banana Cake with "Cream Cheese" Frosting (gluten-free + dairy-free)

Ingredients

  • 1 cup brown sugar
  • 1 egg
  • 3 mashed bananas
  • 1/4 cup avocado oil
  • 1 tsp vanilla extract
  • 1 cup + 1 tbsp gluten-free 1:1 baking flour
  • 2 tsp cinnamon
  • 1/4 tsp salt
  • 1 tsp baking soda

For the Dairy-Free Cream Cheese Frosting:

  • 1/2 cup dairy-free cream cheese, softened (can sub regular cream cheese)
  • 2 tbsp butter or vegan butter, softened
  • 2 tbsp maple syrup
  • 1/2 cup powdered sugar

Instructions

  • Preheat oven to 350F and line a baking dish (I used 8x8) with parchment paper.
  • Whisk together the brown sugar and the egg.
  • Stir in mashed bananas, oil, and vanilla.
  • Add in flour, cinnamon, salt, and baking soda. Mix again.
  • Pour batter into baking dish and bake for 40-45 minutes.
  • Let cake cool and make frosting by mixing together all ingredients.
  • Spread frosting over cake and enjoy!
