Cookie Dough Bars

Ingredients

  • 2 cups almond flour
  • 1/3 cup coconut sugar
  • 1/4 cup coconut oil (melted)
  • 1/4 cup almond butter
  • 2 tbsp milk (I used almond milk)
  • 1 tsp vanilla extract
  • pinch sea salt
  • 1/2 cup chocolate chips

For the chocolate topping

  • 1 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  • Add all cookie dough bar ingredients to a large bowl. Mix well.
  • Press cookie dough into an 8x8 baking dish lined with parchment paper. Freeze for 10 minutes.
  • Melt chocolate chips and coconut oil in 30 second intervals in the microwave, stirring between each.
  • Top cookie dough bars with melted chocolate, spread evenly.
  • Set in the freezer for 1-2 hours. Slice and enjoy! Store in the refrigerator for softer bars and freezer for slightly more solid bars.
