Healthy Reese's Eggs

Ingredients

  • 1/2 cup peanut butter (look for a brand that only contains peanuts or peanuts and salt)
  • 1/4 cup vanilla protein powder (see above for what brand I use)
  • 1/2 cup chocolate chips (vegan)
  • 1 tsp coconut oil

Instructions

  • Add peanut butter to a bowl and microwave for 15 seconds.
  • Stir in protein powder until you get a nice fluffy texture.
  • Scoop out about 2 tbsp each and set on a parchment paper lined plate. Lightly form into eggs with a spoon or your fingers. Freeze for at least 2 hours. Once they are frozen, you can smooth out any bumps/form them a little better if you want.
  • Melt chocolate and coconut oil in the microwave in 30 second increments, stirring between each.
  • Dip each egg into the chocolate and set back into the freezer for 5 minutes.
  • Optional— use remaining chocolate for an extra chocolate drizzle if you want and top with flakey sea salt.
  • Once they are re-frozen, you can cut around the edges if there’s any access chocolate to make them into perfect eggs shapes!
