These Pumpkin Cookies are SUPER easy to make, using only three ingredients, and they’re ready in less than twenty minutes! The fluffy, cake-like texture, pumpkin flavor, and melted chocolate chips, make these the perfect cookies to enjoy all throughout Fall.

We all love a quick dessert made with minimal ingredients to make and enjoy when that afternoon sweet tooth comes in. And that’s exactly why I’m OBSESSED with these cookies. They’re viral for a reason! Made with only boxed cake mix, pumpkin puree, and chocolate chips, it’s mind-blowing how delicious these are. I was worried that the texture wouldn’t be my favorite because I like a soft center and slightly crispy outside but I was surprised that they turned out exactly like that! The added pumpkin puree adds a very subtle pumpkin flavor and is what makes the texture of these cookies so soft and chewy.

I’ve made these so many times since I first tried them and now consider them a Fall baking staple! They’re perfect to prep for the week, bring to a get-together, or enjoy for an at-home date night. Honestly, whoever you share these with will think you put hours into the kitchen but they don’t have to know how easy it really was 😉

How To Make

  1. Preheat the oven to 350F and line a baking sheet with parchment paper or lightly grease with a spray oil.
  2. In a large mixing bowl, pour in the entire bag of cake mix and the entire can of pumpkin puree. Stir until smooth and fully combined. (Tip: If wanting to add spices like cinnamon or pumpkin pie spice, do that here!)
  3. Gently fold in chocolate chips until evenly distributed throughout the dough. (Tip: Using a silicone spatula helps prevent the dough from sticking while mixing.)
  4. Use a cookie scoop or spoon to form each cookie and place on the baking sheet. Leave a couple of inches between each in case they spread while baking! Repeat until all dough is used. Option to place more chocolate chips on top!
  5. Bake in the oven for fifteen to seventeen minutes, until firm and slightly golden.
  6. Once done, let them cool slightly, and enjoy!

    Instructions
