Sweet Potato Quiche (Gluten Free, High Protein)

This Sweet Potato Quiche is gluten free, high protein, and full of fiber. It comes together with minimal prep, only taking 40 minutes and one dish! This skips the crust but still delivers the cozy, comforting flavors of a traditional quiche – with a naturally sweet base from the sweet potatoes, creamy cottage cheese, and your favorite veggies. This is one you’ll want to keep in your rotation!

One of my favorite easy breakfasts to prep is my High Protein Quiche. It doesn’t just have to be something that’s enjoyed for brunch or a special occasion! A traditional quiche can take a bit of time to make, but with my hacks of using a tortilla and now using sweet potato, it can take no time at all. In this recipe, we’re making a crustless quiche using sweet potato as the “crust” or base. It firms up to be the best texture to hold the egg and vegetable mixture and adds a subtle sweetness that pair so well with the savory filling!

My favorite thing about quiche is that you can customize it to use whatever you have at home, in the fridge, and even flavor you’re craving. And this Sweet Potato Quiche is no different! I almost always have a bag of sweet potatoes in my kitchen ready to use and when I don’t want to roast them by themselves, I’ll see how I can add them in a recipe – like this one! To keep with the theme of using what we have, I’ll add any fresh vegetables that need to be used and even a frozen vegetable mix if I have it. It’s one of the easiest ways to not waste groceries AND get extra color, fiber, and nutrients in your day without thinking twice.

While most quiche is pretty balanced when it comes to macros, we’re really amping up the protein in this recipe by adding one simple ingredient – cottage cheese! We have protein and healthy fats from the cottage cheese, eggs, and cheese, and high fiber carbs from the sweet potato and vegetables. It tastes delicious and will keep you satisfied and full for a while!

What You’ll Need

  • Sweet potato – This recipe will use one large or two medium for the base. You can use any color sweet potato!
  • Eggs
  • Cottage cheese – My favorite has been this one from Good Culture because of the texture, subtle flavor, and higher quality.
  • Vegetables of choice – I used spinach and tomatoes for this recipe!
  • Cheddar cheese – Optional for topping and more added flavor.
  • Sea salt
  • Pepper

Flavor Ideas

  • Southwest – bell peppers, yellow onion, cumin or a little of a taco seasoning packet.
  • Anti-inflammatory – spinach, broccoli, red onion, turmeric, black pepper.
  • Mediterranean – Spinach, cherry tomatoes, topped with feta.
  • Classic – broccoli, cheddar cheese, chives.
  • Spring – asparagus, mushroom, thyme.

How To Make

  1. Preheat oven to 400F and bake the sweet potatoes until soft (about 40 minutes).
  2. Lightly spray a round quiche dish (I used this one!)
  3. In the quiche dish, add the baked sweet potato and press it to line the bottom and cover like a crust.
  4. In the same dish, add eggs, cottage cheese, salt, pepper on top of the sweet potato and whisk until smooth.
  5. Add chopped vegetables of choice to the egg mixture and spread evenly. Option to sprinkle cheese on top.
  6. Bake for 35-40 minutes or until set and golden brown around the edges.
  7. Once the quiche is done baking, let it cool for a few minutes, slice, and enjoy!

  • 1/3 cup cottage cheese

Instructions
