For this recipe, I used my classic peanut butter cookie recipe and added peanuts for a crunch, dates for a caramel-y texture, and chocolate… well cause… duh 😆🍫🙌🏼
These babies are gluten-free, grain-free, dairy-free and so easy to make 💯
You can easily make these cookies paleo by swapping the peanut butter for nut butter of choice and the chopped peanuts for chopped nuts of choice!
Soft Baked Peanut Butter Chocolate Chip Date Cookies
Ingredients
- 1 cup peanut butter (or any nut butter)
- 1 cup coconut sugar
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking soda
- 1/2 cup chocolate chips or chunks
- 5 medjool dates (chopped)
- 1/4 cup peanuts (roughly chopped)
- sea salt (for topping)
Instructions
- Preheat oven to 350F and line a baking sheet with parchment paper.
- In a large bowl, mix together peanut butter, coconut sugar, egg, vanilla, and baking soda.
- Stir in chocolate chips, peanuts, and dates.
- Using a cookie scoop, scoop out about 1 heaping tablespoon per cookie and roll into balls. Slightly flatten each cookie dough ball.
- Bake for 12-15 minutes, top with sea salt, and let cool completely.
