S’mores Rocky Road (Gluten Free, Dairy Free)

This Smore’s Rocky Road is gluten free, can be made dairy free, and only has three simple ingredients. If you love the taste of smore’s and a crunchy texture, you’re going to be obsessed with this new dessert!

I’ve seen this on social media a few times and finally decided to give it a try… now it’s one of my favorite quick desserts! I love that it has only three ingredients and takes no time to put together. The waiting is the longest part but the result is SO worth it 🤩 I love a good smore’s recipe and this one has the crunch from the graham cracker, chewiness from the marshmallow, and a rich, chocolatey fix. Who wouldn’t be obsessed?

What You’ll Need

  • Mini Marshmallows
  • Chocolate chips
  • Graham crackers – can be gluten free if needed. I used Simple Mills Honey Cinnamon Sweet Thins!

How To Make

Start by prepping your ingredients. Finely chop the graham crackers into small pieces. Melt the chocolate chips by using a double broiler method over the stove or by using the microwave. If using the microwave, add a spoonful of coconut oil and heat for 30 seconds, stir, and repeat until fully melted!

Next, add the graham crackers, mini marshmallows, and melted chocolate to a large bowl and stir until everything is coated in chocolate.

Line a loaf pan with parchment paper and pour the mixture in, evening out the top, and sprinkling with thick sea salt. Place in the freezer for one hour. Once set, take out of the freezer, slice, and enjoy!

Ingredients

  • graham crackers (can be gluten free)
  • chocolate chips (can be dairy free)
  • mini marshmallows (store-bought or homemade)

Instructions

  • Finely chop the graham crackers into small pieces. Melt the chocolate over the stove using a double boiler method or using the microwave. (See above for instructions on both)
  • In a large bowl, add graham crackers, mini marshmallows, melted chocolate and stir until fully covered by the chocolate.
  • Line a loaf pan with parchment paper. Transfer the mixture to the pan and evenly spread the top.
  • Place in the freezer for one hour. Take out, slice, and enjoy!
