This Single-Serve Cottage Cheese Brownie is gluten free, low in sugar, and high in protein. It’s the perfect dessert to make when you’re craving a sweet, chocolatey brownie but don’t want to go through the process of making a full batch! This brownie is slightly underdone in the center making it like a lava cake and brownie all in one. 

Regular brownies are delicious enough to enjoy as they are but I wanted to put together a recipe for anyone (like me) wanting to add more protein into their diet. These ingredients are used to give this recipe the gooey rich chocolatey texture of everyone’s favorite brownie while also providing a good balance of healthy fats and protein. I was skeptical of turning cottage cheese into a brownie at first, but I’m now totally a fan. This might just be your new nightly dessert too!

What You’ll Need

This healthy single-serve brownie is gluten free, keto, low sugar, and high protein. It's an easy healthy dessert. How To Make

  1. Add all of your ingredients except for the almond milk to a microwave-safe dish (like this one). Stir to combine.
  2. Slowly add in the almond milk until you reach a very thick batter consistency, stirring until everything is mixed and the batter thickens.
  3. Microwave for one minute. The brownie should be slightly firm but still a little gooey, especially in the center. Option to top with a drizzle of chocolate, some ice cream, or coconut cream, and enjoy!

Tip: you’ll want to make sure that the dish you use is large enough to prevent spillage when cooking, the brownie batter will rise in the microwave! Make sure there’s room at the top or use a slightly larger container.

Ingredients

  • 1/4 cup cottage cheese
  • 1 scoop chocolate protein powder
  • 2 tbsp cocoa powder (or cacao powder)
  • 1 tbsp maple syrup
  • 1 pinch sea salt
  • 1 splash vanilla extract
  • 1/4 tsp baking powder
  • 1 tbsp almond milk (any dairy free or regular milk)
  • chocolate chips (add what you like!)

Instructions

  • Add all of the ingredients except for the almond mik to a microwave safe dish and stir.
