Single-Serve Cottage Cheese Brownie (Gluten Free)

This healthy single-serve cottage cheese brownie is gluten free, keto, low sugar, and high protein. It's an easy healthy dessert. In a small white dish there is a rich dark chocolate brownie with a lava cake, gooey, fudgey texture. Chocolate chunks lay on top that have melted into the brownie. A white dollop of whipped cream and chocolate drizzle is on top of everything. A spoonful of the brownie is shown to show the soft gooey texture and melting chocolate.

This Single-Serve Cottage Cheese Brownie is gluten free, low in sugar, and high in protein. It’s the perfect dessert to make when you’re craving a sweet, chocolatey brownie but don’t want to go through the process of making a full batch! This brownie is slightly underdone in the center making it like a lava cake and brownie all in one.

Regular brownies are delicious enough to enjoy as they are but I wanted to put together a recipe for anyone (like me) wanting to add more protein into their diet. These ingredients are used to give this recipe the gooey rich chocolatey texture of everyone’s favorite brownie while also providing a good balance of healthy fats and protein. I was skeptical of turning cottage cheese into a brownie at first, but I’m now totally a fan. This might just be your new nightly dessert too!

Why You’ll Love This

  • Single-serve – Have you ever been craving a cookie or brownie but didn’t want to take the time to make an entire batch? Single-serve recipes are the BEST for satisfying those cravings with minimal effort, clean up, and the same amazing treat!
  • High protein – By using cottage cheese and chocolate protein powder, this dessert is given a BIG protein boost with about 35g 🙌
  • Satisfies your sweet tooth – This is SO chocolate and fudgey but it actually doesn’t have any refined sugars or sweeteners (depending on what protein powder and milks you use – the simpler the better). The chocolate in the brownie, along with the chocolate chips mixed in, and optional chocolate drizzle are the perfect amount of sweetness!

    What You’ll Need

    How To Make

    1. Add all of your ingredients except for the almond milk to a microwave-safe dish (like this one). Stir to combine.
    2. Slowly add in the almond milk until you reach a very thick batter consistency, stirring until everything is mixed and the batter thickens.
    3. Microwave for one minute. The brownie should be slightly firm but still a little gooey, especially in the center. Option to top with a drizzle of chocolate, some ice cream, or coconut cream, and enjoy!

Tip: you’ll want to make sure that the dish you use is large enough to prevent spillage when cooking, the brownie batter will rise in the microwave! Make sure there’s room at the top or use a slightly larger container.

    Recommended Tools

    • Ramekin – These are my go-to for most single-serve recipes.
    • Silicone spatula – Perfect for mixing a thick batter like this.
    • Stainless steel measuring cups & spoons – Easier to clean and last longer than plastic ones.
