Single-Serve Banana Protein Baked Oatmeal

Baked oatmeal has become one of my absolute favorite breakfasts and this recipe at the top of my list ๐Ÿ˜Š

This Single Serve Banana Protein Baked Oatmeal is gluten-free (as long as you use gluten-free oats), dairy-free, and added-sugar free. It contains healthy protein, fat, and fiber making it a perfectly well-balanced breakfast option. It is also extremely simple to make and you can easily make it ahead of time if you rush out the door in the morning.

What is baked oatmeal?

Baked oatmeal is basically a muffin and oatmeal hybrid! You take all of the ingredients you would normally add to oats and bake it in the oven creating the most DELICIOUS cake/muffin-like texture.

What you will need for this recipe:

  • 1/2 bananaโ€” the spottier, the better! The banana adds some natural sweetness and a delicious texture to this recipe.
  • oatsโ€” I typically go for organic because oats are high in glyphosate. Gluten-free if needed
  • protein powderโ€” I love Sprout Living vanilla protein powder in this recipe (discount code: callascleaneats). The protein poweder also adds a bit of sweetness so if you skip it, make sure to add sweetener of choice.
  • chia seedsโ€” I use a small amount of chia seeds to help bind the oatmeal together and also to add some healthy fiber.
  • non-dairy milk of choiceโ€” I typically use almond, cashew, or oat milk.
  • cinnamon, sea salt, and baking soda

Ingredients

  • 1/2 spotty banana
  • 1/3 cup oats
  • 1 tsp chia seeds
  • 1 scoop vanilla protein powder
  • 1/3 cup milk (I use almond, cashew, or oat)
  • 1/4 cup water
  • cinnamon to taste
  • pinch sea salt
  • 1/4 tsp baking soda

Instructions

  • Preheat oven to 350F. In a bowl, mash banana with a fork.
  • Add the rest of the ingredients and mix well.
  • Pour batter into an oven-safe baking dish and bake for 20-25 minutes.
  • Add toppings of choice. I love adding nut butter, bee pollen, and more cinnamon.
