Sheet Pan Fajitas
Ingredients
- 2 lbs chicken thighs (chicken breast works too)
- 3 large bell peppers
- 1 red onion
- 1 lime
- cilantro
- avocado oil
- sea salt
- garlic powder
- onion powder
- cumin
- chili powder
- oregano
- pepper
Instructions
- Preheat oven to 425F and line baking sheet with parchment pepper.
- Slice peppers, red onion, and chicken into strips.
- Drizzle avocado oil, sea salt, pepper, garlic powder, onion powder, cumin, oregano, chili powder, juice of 1/2 lime, and toss so that everything is coated evenly.
- Bake for 15 minutes, toss again, and bake for another 5-10 minutes or until chicken is fully cooked through.
- Add juice of other 1/2 lime and cilantro.
