Sheet Pan Fajitas

The easiest meal that’s also healthy, yummy, and perfect for summer 🌮

Serving ideas

  • on tortillas with salsa, cheese, sour cream, and guac
  • on a salad with avocado, salsa, and crushed tortilla chips
  • in a burrito bowl with rice, beans, salsa, guac, cheese, and romaine
  • on their own (yup, they’re that good!)

I love making extra to have for leftovers. I never get bored because I can switch up how I serve them at each meal!

Sheet Pan Fajitas

Ingredients

  • 2 lbs chicken thighs (chicken breast works too)
  • 3 large bell peppers
  • 1 red onion
  • 1 lime
  • cilantro
  • avocado oil
  • sea salt
  • garlic powder
  • onion powder
  • cumin
  • chili powder
  • oregano
  • pepper

Instructions

  • Preheat oven to 425F and line baking sheet with parchment pepper.
  • Slice peppers, red onion, and chicken into strips.
  • Drizzle avocado oil, sea salt, pepper, garlic powder, onion powder, cumin, oregano, chili powder, juice of 1/2 lime, and toss so that everything is coated evenly.
  • Bake for 15 minutes, toss again, and bake for another 5-10 minutes or until chicken is fully cooked through.
  • Add juice of other 1/2 lime and cilantro.
