All classic scoops you’d get at a regular ice cream shop. But one flavor that I don’t think gets enough attention is Pistachio! People think it sounds weird and don’t give it a chance but it’s the perfect blend of salty, sweet, and has such a rich flavor (that also feels fancy 💁♀️).
Cottage cheese ice cream is such an easy, low effort way to make your own ice cream at home. Don’t get me wrong, I love my Ninja Creami, but sometimes even that can be a few too many steps. With this Pistachio ice cream, all you need is to blend everything up and wait for it to set in the freezer – just a few hours of being patient before you can enjoy a nice scoop (or two)!

What You’ll Need
- Cottage Cheese – I love Good Culture for these recipes for a thick, creamy consistency. I use full-fat cottage cheese so it’s not as watery or icy!
- Pistachios – I get a bag of unshelled pistachios so I don’t have to do that part and it’s even easier.
- Maple syrup – If you’re not vegan you can also use honey or another similar liquid sweetener!
How To Make
- Add all of the ingredients to the cup of a high speed blender or food processor.
- Blend until smooth, stopping to scrape down the sides if needed to make sure you get it all.
- Pour the mixture into a medium-sized glass food container and smooth out the top.
- Place in the freezer for at least two to four hours until set. Make sure to stir halfway through to prevent iciness!
- Once the ice cream is set, scoop it out, serve, and enjoy!
