Paleo Banana Bread MUG MUFFIN (with vegan option!)

Ya know those days when you NEEEEED banana bread, but don’t feel like making an entire loaf? Well, I have those days quite often πŸ˜‚ and this paleo banana bread mug muffin is a life saver!

This recipe only calls for 1/2 of a banana. The more brown/spotty your banana is, the better because spottier = sweeter!

If you don’t want to waste the other half of your banana, just cut it in half (with the peel still on) and then stick it into the fridge for later! You could also freeze the other half to use for smoothies.

This is what the consistency of your batter should look like. I like my banana bread somewhat moist! So, if you don’t like a moist texture, you can use a little less water for a thicker batter.

Microwave for two minutes and wah-la!

Paleo Banana Bread Mug Muffin

Ingredients

  • 1/2 banana (the spottier, the better)
  • 2 tbsp coconut flour
  • 1 tsp ground flax seed (or can use another tsp coconut flour)
  • 1 egg
  • 1/4 tsp baking powder
  • cinnamon (to taste)
  • 4-5 tbsp water (or enough to make your consistency match the picture… see above!)

Instructions

  • Lightly grease mug or ramekin (can use butter, coconut oil, avocado oil, etc.)
  • Mash banana in a separate bowl. Add the rest of the ingredients and mix well.
  • Pour batter into mug.
  • Microwave for two minutes or until fully cooked through.
  • I always add toppings! This time, I used almond butter and dark chocolate chips πŸ™‚

Notes

**option to add sweetener of choice!Β Most of the time, I don’t even need a sweetener with this recipe but I have tried honey, maple syrup, coconut sugar, and stevia and they’re all delicious!Β
