Paleo Apple Cinnamon Muffins

These Paleo Apple Cinnamon Muffins scream Fall and are gluten-free, dairy-free, and grain-free. They are also low-sugar and sweetened only with apples and a touch of unrefined coconut sugar!

Pumpkin is definitely my favorite Fall flavor but I have to say, these are *almost* as delicious as my Healthy Pumpkin Chocolate Chip Muffins 😆pumpkin lovers, beware that you make be converted over to team apple!

This recipe comes together super quickly and requires hardly any clean up thanks to using a blender! If you do not have a blender, a food processor works too.

I love blending half of the amount of apples to naturally sweetenen the muffins and strirring in the other half so you get that soft + caramelized apple chunk in every bite!

These Paleo Apple Cinnamon Muffins make a perfect breakfast (you could even add some collagen to the batter for extra protein!), healthy snack, and even dessert. They are absolutley amazing reheated with a scoop of vanilla coconut milk ice cream 😍

I keep them stored in the refrigerator but they also freeze really well. Just thaw in the refrigerator the night before or stick in the microwave (right from frozen!) for 20-30 seconds.

Paleo Apple Cinnamon Muffins

Ingredients

  • 2 medium sized apples (about 2 cups diced)
  • 2 cups almond flour
  • 2 eggs
  • 1/2 cup coconut sugar
  • 2 tbsp coconut oil (melted + cooled)
  • 1 tsp vanilla extract
  • 2 tsp cinnamon
  • 1/2 tsp baking soda
  • 1/2 tsp apple cider vinegar (lemon juice will work too)
  • dash sea salt

Instructions

  • Preheat oven to 350F and line 12 muffins tins.
  • Peel and then dice apples (peeling is optional but dice the apples pretty small!)
  • Add all ingredients (include 1 diced apple but save the other diced apple to stir in after blending) to a high speed blender or food processor. Blend until fully combined (you may have to scrape the sides a couple of times).
  • Stir in remaining apples.
  • Spoon batter into each lined muffin tin. Smooth out the top of each muffin with a spoon or small spatula.
  • Sprinkle extra cinnamon and sugar on top.
  • Bake 28-35 minutes.
