This Cottage Cheese Banana Bread is gluten free, low sugar, and packed with protein compared to your everyday banana bread recipe. It’s the ultimate fluffy, moist, and delicious bread using only simple ingredients! The next time you have spotty bananas and need to put them to use, you NEED to give this a try.

Making banana bread reminds me of lockdown when everyone was making it at least once a week (or more). Honestly, I loved the habit of baking a loaf to have prepped for a snack throughout my week. Out of all of the banana bread recipes I’ve tried though, I promise you this one is my favorite! It’s quickly become my go-to and I think it will be yours too.

There’s nothing better than a bread with a soft, moist, texture inside and a slightly crispy outside. Thanks to one special ingredient in this banana bread, that’s exactly what we get! That special ingredient is… cottage cheese! In this recipe, it isn’t the star of the show but it adds to the amazing texture of the bread while also providing healthy fat and protein.

Enjoy this as a snack, a post meal sweet treat, or with your breakfast in the morning!

Why You’ll Love This Bread

  • High protein â€“ Eggs and cottage cheese help increase the protein in this recipe, making it higher than most other banana breads!
  • Balanced– We love a balanced recipe that has fiber, fat, protein, and carbs. In this banana bread, we have eggs and cottage cheese for protein and fat, oat flour and bananas for fiber, and honey for carbs.
  • Low sugar â€“ This is naturally sweetened with spotty bananas and honey, making this bread lower in sugar and free of added refined sugars depending on what chocolate chips you use! Hu baking chocolate chips are a great option made with coconut sugar.
  • Dietary friendly â€“ This is gluten free and low in sugar.

How To Make

  1. Preheat oven to 350F and line a loaf pan with parchment paper.
  2. In a large bowl, mash the spotty bananas with a fork. Then add the cottage cheese and continue to mash until mixed. (Tip: If you want a smoother consistency and don’t mind using more than one bowl, you can blend the bananas and cottage cheese in a high speed blender until smooth.)
  3. Add the rest of the ingredients except chocolate chips and mix well. Since this is made in one bowl, we want to make sure that everything is fully combined!
  4. Stir in the chocolate chips (or other mix-ins like crushed nuts, blueberries, walnuts, etc.) and pour into the loaf pan. Top with extra chocolate chips.
  5. Bake for 40-45 minutes or until slightly golden. (Tip: Right when you take it out of the oven, while it’s still warm, sprinkle some flakey sea salt to help add some flavor!)
  6. Let it cool, slice, and enjoy!
