Out of all of the banana bread recipes I’ve tried though, I promise you this one is my favorite! It’s quickly become my go-to and I think it will be yours too.

There’s nothing better than a bread with a soft, moist, texture inside and a slightly crispy outside. Thanks to one special ingredient in this banana bread, that’s exactly what we get! That special ingredient is… cottage cheese! In this recipe, it isn’t the star of the show but it adds to the amazing texture of the bread while also providing healthy fat and protein.

What You’ll Need

This high protein banana bread is gluten free, refined sugar free, low sugar, high protein, and made with cottage cheese. How To Make

  1. Preheat oven to 350F and line a loaf pan with parchment paper.
  2. In a large bowl, mash the spotty bananas with a fork. Then add the cottage cheese and continue to mash until mixed. (Tip: If you want a smoother consistency and don’t mind using more than one bowl, you can blend the bananas and cottage cheese in a high speed blender until smooth.)
  3. Add the rest of the ingredients except chocolate chips and mix well. Since this is made in one bowl, we want to make sure that everything is fully combined!
  4. Stir in the chocolate chips (or other mix-ins like crushed nuts, blueberries, walnuts, etc.) and pour into the loaf pan. Top with extra chocolate chips.
  5. Bake for 40-45 minutes or until slightly golden. (Tip: Right when you take it out of the oven, while it’s still warm, sprinkle some flakey sea salt to help add some flavor!)
  6. Let it cool, slice, and enjoy!

Cottage Cheese Banana Bread (Gluten Free)

  • 3 spotty bananas
  • 2 eggs
  • 1/2 cup cottage cheese
  • 2 cups oat flour
  • 1/4 cup honey
  • 1/4 tsp sea salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • chocolate chips (as many or as little as you like)

Instructions

  • Preheat oven to 350F and line a loaf pan with parchment paper.
  • In a large bowl, mash the bananas and cottage cheese until smooth. Add the rest of the ingredients except chocolate chips and mix well.
  • Fold in chocolate chips and pour into loaf pan. Top with extra chocolate chips.
