These Healthy Reese’s Eggs are gluten free, vegan, and high protein. They’re incredibly easy to make, needing only three ingredients, and some patience while they set in the freezer. Once you take a bite with the rich chocolate coating and fluffy, sweet, and salty peanut butter center, you’ll forget all about the store-bought Reese’s Eggs!

I make these Healthy Reese’s Eggs every year around this time and they are always a huge hit! This honestly might be one of the recipes that my friends and family request or remake the most. Consider this an OG recipe that never gets old and with such a classic flavor combo and childhood treat, how could it? Anything chocolate and peanut butter— count me in. These are one of my favorite treats! I actually love keeping my freezer stocked with them all year round. This recipe is based off of my Healthy Protein Peanut Butter Cups, so between the cups and the eggs, I always have a good freezer stash 💁‍♀️

It’s also a plus that these have added protein from the protein powder but in my opinion, the best part of using protein in this recipe is that you don’t need to add any sweetener to the peanut butter (because the vanilla protein is already sweetened) and it also creates the most delicious decadent fluffy texture. While using protein powder is my favorite way to make this recipe, you don’t have to use it if you don’t have any or if you aren’t a fan! If you are skipping it, just mix a little almond or coconut flour and add some coconut sugar or another sweetener to get a similar texture and flavor.

What You’ll Need:

  • Natural peanut butter – The runnier the better and made with simple ingredients. Look for ones with just peanuts or peanuts and salt. You can use another nut or seed butter but it will have a different flavor. Tahini or sunflower butter would be closest taste-wise!
  • Vanilla protein powder – My favorite is Flavcity (code: CALLA) for either whey or plant-based options.
  • Chocolate chipsHu gems or Just Date are great if you’re wanting a refined sugar free option, I also love these vegan chocolate chips from Enjoy Life.
  • Coconut oil

What Protein Powder Do I Recommend?

My favorite protein powder is by Flavcity! They have so many flavor options and both whey or plant-based protein powders. They’re so good on their own mixed with water or milk for a classic protein shake but I love using it for baking (like this recipe!).

I’ve tried a lot of protein powders over the years that are great but this one has quickly taken top spot – the flavor is delicious and the ingredients are simple. Most blends include adaptogens and are only sweetened with organic stevia and monkfruit for the perfect level of sweetness. Plus each serving has 20+ grams of protein which helps easily increase your intake without thinking much about it. Even easier when it’s used in desserts like this one 😉

How To Make

  1. Prep by lining a plate or tray with parchment paper.
  2. In a medium bowl, add peanut butter and microwave for fifteen seconds.
  3. Stir in the protein powder until you get a nice, fluffy texture.
  4. Scoop out about two tablespoons each and set them on the lined tray, leaving space between. Lightly form each ball into eggs with a spoon or your fingers.
  5. Freeze for at least two hours or until fully set. Once they’re frozen, you can smooth out any bumps and form them a little better if you want.
  6. In a small bowl, make the chocolate coating by combining chocolate and coconut oil, microwave for thirty seconds, stir, and repeat until smooth.
  7. Using a fork, carefully dip each egg into the chocolate, making sure to cover completely. Place each back on the line tray and set in the freezer for five minutes. (Tip: I like to use a fork to place the peanut butter egg on. Use that to dip into the chocolate, flip it around to make sure it’s coated, then lift it up and scrape the back of the fork on the edge of the bowl to get any extra chocolate off.)
  8. If you have remaining chocolate, you can use this for a chocolate drizzle on each and top with flakey sea salt.
  9. Once they’re re-frozen, you can cut around the edges if there’s any excess chocolate to make them into perfect egg shapes. Enjoy!

Healthy Reese’s Eggs (Gluten Free, Vegan)

Ingredients

  • 1/2 cup peanut butter (look for a brand that only contains peanuts or peanuts and salt)
  • 1/2 cup vanilla protein powder (see above for what brand I use)
  • 1/2 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  • Add peanut butter to a bowl and microwave for 15 seconds.
  • Stir in protein powder until you get a nice fluffy texture.
  • Scoop out about 2 tbsp each and set on a parchment paper lined plate. Lightly form into eggs with a spoon or your fingers. Freeze for at least 2 hours. Once they are frozen, you can smooth out any bumps/form them a little better if you want.
  • Melt chocolate and coconut oil in the microwave in 30 second increments, stirring between each.
  • Dip each egg into the chocolate and set back into the freezer for 5 minutes.
  • Optional— use remaining chocolate for an extra chocolate drizzle if you want and top with flakey sea salt.
  • Once they are re-frozen, you can cut around the edges if there’s any excess chocolate to make them into perfect eggs shapes!
