Healthy Peanut Butter “Blossoms” (Gluten Free)

These Healthier Peanut Butter “Blossoms” are gluten-free, dairy-free, super simple, and absolutley delicious! All you need are 4 key ingredients.

This recipe is based off of my Easiest Ever Peanut Butter Cookies— an absolute staple in my home. I love making a double batch and storing half in the freezer. From there, you can simply pull out a couple out whenever you want them, let them thaw or stick them in the microwave 15-25 seconds and they are good as new! Does anyone else meal prep dessert? Asking for a friend 😬

For this recipe, all you need is:

  • peanut butter (preferably the natural kind— that only contains peanuts or peanuts and salt)
  • coconut sugar (any sugar will work but I love using coconut sugar because it is less processed than regular white sugar)
  • 1 egg
  • vanilla extract
  • baking soda
  • chocolate bar of choice (I typically go for a vegan + lower sugar option)

Ingredients

  • 1 cup peanut butter
  • 1 cup coconut sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1 chocolate bar of choice (chopped into squares or rectangles)
  • sea salt for topping

Instructions

  • Preheat oven to 350F. Line a baking sheet with parchment paper and set aside.
  • Mix peanut butter and sugar. Add the rest of the ingredients and mix well.
  • Roll into balls (about 2 tablespoons each).
  • Slightly flatten each cookie and press chocolate chunk on top.
  • Bake 10-12 minus or until the edges start to get slightly crispy. Top with sea salt.
