This Healthy Burger Bowl is gluten free, low carb, and can be customized to whatever you like! It’s perfect when you’re craving a burger but want something light and just as satisfying. This meal is ready in less than thirty minutes and is a great meal prep addition, prepare to be obsessed!

This is easily one of my all-time favorite lower carb meals. It actually keeps me really full for how simple it is and it can be pretty nutrient dense – with fiber, protein, and healthy fats. I love being able to prep all of the ingredients, cook once, and eat a few times. This makes for such a yummy lunch, even if I had the exact same thing for dinner the night before!

The great thing about this is that it’s pretty much a deconstructed burger turned into a salad so whatever you normally get on your burger, you can put in this bowl! I almost always get a bacon burger so for my bowls, I’ve been adding crispy bacon for some extra flavor and crunch. If I have extra time, I’ll make sweet potato or regular potatoes to go with it but then it isn’t as lower carb – like my original Burger Bowls. You can change up the spices, add spicy pickles (my favorite!), use roasted vegetables instead of raw, and an egg… the possibilities are endless!

While the ingredients are simple, the real star of the meal is the flavorful burger sauce! It’s similar to Big Mac sauce if you’ve ever had that – tangy, rich, creamy, and a little sweet. Because we have cheese, bacon, and grass-fed beef in this bowl, I wanted to keep the sauce on the lighter side so we’re using Greek yogurt as the base. This makes the sauce super creamy and adds some extra protein! Combined with ketchup, mustard, a little honey, and pickle juice, there’s a lot of flavor in one little sauce. Sometimes I make it just to add to other meals 💁‍♀️

I like to meal prep this so I can have ingredients ready to go for a quick lunch or dinner throughout the week. So it’s great for an easy weeknight dinner or lunch when you don’t have much else in the fridge!

What You’ll Need

  • Lettuce
  • Tomato
  • Pickles – I’ve been obsessed with adding these spicy pickles or regular dill to mine.
  • Red onion
  • Bacon – I like any from Applegate! I always look for organic with no sugar added.
  • Shredded cheese – I like buying a fresh block of cheddar and shredding it myself!
  • Ground beef
  • Avocado
  • Green onion
  • Seasonings – salt, pepper, garlic powder, onion powder, paprika

For the Healthier Burger Sauce

  • Greek yogurt – I use plain Greek yogurt to help sneak in extra protein!
  • Ketchup
  • Mustard
  • Honey
  • Salt
  • Pickle juice – Just take this from the jar of pickles you use for the bowl toppings.

How To Make

  1. Preheat oven to 400F and line a baking sheet with parchment paper.
  2. Place the bacon on the baking sheet and bake for fifteen to twenty minutes, until you’ve reached desired crispiness.
  3. On the stovetop, cook the ground beef until it’s fully cooked through, browned, and no pink remains. Add salt, pepper, garlic powder, onion powder, paprika and mix well.
  4. Slice the lettuce, tomato, pickles, red onion, bacon, avocado, and green onion. Then shred the cheese if it’s not already pre-shredded.
  5. Make the burger sauce by combining the sauce ingredients and add splashes of pickle juice until you reach your desired consistency.
  6. Assemble the burger bowl by starting with a base of lettuce, then adding ground beef, and other preferred toppings.
  7. Finish your bowl off with homemade healthier burger sauce and green onions. Enjoy! (Tip: Sometimes I like to throw some avocado oil potato chips on top of my bowl!)
