Creamy Chia Oats

I love having a warm comforting bowl of oatmeal in the morning– ESPECIALLY during the winter months. But, when I used to have something like a plain bowl of oatmeal with a banana… I stayed full for maybeee 30 minutes, an hour tops. So, I started making a mixture of chia pudding and oatmeal and it always does the trick!

I’ve actually been making these chia oats for a few years now and it is always such a yummy and satisfying breakfast! The oats give me some healthy complex carbohydrates and the chia seeds add fiber to keep me full all morning. I always add some fat and protein as well for extra staying power + flavor. Today I added peanut butter, some grain-free chocolate granola, 1/2 banana, a drizzle of vegan caramel sauce, and a scoop of collagen. Pssst. you can read about why I love collagen here! You can really customize the recipe by using whichever toppings + additions that you like!

The key to making your chia oats creamy is cooking them in milk. I actually use my my homemade cashew creamer because it also adds a hint of sweetness from the maple syrup and flavor from the cinnamon 🤤 but you can use any type of milk you prefer.

BONUS: this recipe only takes about 5-10 minutes, so it’s perfect for even the busiest mornings. Just pack up your chia oats in a jar, and take on the go!

Creamy Chia Oats

Ingredients

  • 1/3 heaping cup oats
  • 2 tsp chia seeds
  • 1 cup milk of choice (or more– to preferred consistency)
  • dash sea salt
  • 1 tbsp maple syrup (optional)
  • 1/2 – 1 scoop collagen or any protein powder (optional)
  • toppings (of choice)

Instructions

  • Bring your milk to a boil on the stovetop.
  • Add in oats, chia seeds, and sea salt. Turn your heat down to medium-low. Stir.
  • Stir continuously until you reach your desired consistency, about 5 minutes (I turn the heat off when it is still slightly runny because it will continue to thicken after you stop cooking).
  • Stir in your protein of choice and sweetener (both are optional).
  • Add toppings! I always try to at least add some sort of extra fat to keep me full ☺️
