Cooking Through Quarantine

I cannot believe that we have been in quarantine and/or social distancing for almost A FULL YEAR now. It is truly crazy how long it has been but also how fast time flies.

At the beginning of last year, I was into meal prepping, big veggie bowls with healthy protein, etc. but I cannot lie and say that I have stayed motivated to cook and eat super healthy every single day of this past year.

It has definitely ebbed and flowed— some weeks I was motivated and felt “on” and other weeks I felt like a bit of a mess. I went through 1-3 week periods several times throughout the year where any vegetables— and really anything nutritious— did not sound good at all.

I have learned to listen to my intuition with kindness and just go with the flow during those weeks, reminding myself that my body is smart and that this feeling is not permanent.

With that being said, there have also been many weeks where vegetables and nourishing healthy meals have sounded great, but I couldn’t find the motivation to meal prep or cook.
