Not only is this Chocolate Chia Pudding a delicious breakfast OR dessert, it is also a perfectly balanced snack that will keep your blood sugar balanced.
This Chocolate Chia Pudding is full of healthy fiber and contains plant-based protein. It is naturally sweetened with a touch of maple syrup and I love adding Greek yogurt on top for extra protein to keep me fueled for hours.
I love chia pudding of all flavors but chocolate is THEE BEST. It tastes super rich and decadent but is made with only a few healthy ingredients!

Hereâs what you need
- chia seeds
- maple syrup
- cocoa powder
- vanilla extract
- sea salt
- milk of choice

Chocolate Chia Pudding
Servings: 1
Ingredients
- 3 tbsp chia seeds
- 1 tbsp maple syrup
- 1 heaping tbsp cocoa powder unsweetened
- 1/2 tsp vanilla extract
- pinch sea salt
- 3/4 cup milk of choice (I used Pili nut milk)
Instructions
- Add all ingredients to a jar or container. Shake and set in the fridge overnight or for at least 2 hours.
- Optional to top with regular or coconut yogurt and finely chopped dark chocolate.
Hi! Just curious. The recipe says 3 tablespoons of maple syrup and then 1 tablespoon of maple syrup. Iâm assuming one of those is supposed to be Chia seeds? Thanks

There arenât any directions for the recipe. Do you need to let it sit for any length of time? Over night, 10 minutes? Serve right away? Mix in any particular order? Iâve never made chia pudding before. Would love a little more direction on how itâs actually made. Thanks!

This recipe is delicious. I divide 1 recipe it into 4 servings and add dairy free yogurt, blueberries and sweetened shredded coconut. This is dessert for my husband and I.

I was so excited for this and followed the recipe exactly but it did not have a pudding consistency at all. Just like chia seed chocolate milk
Hi! I am so sorry you had trouble! I am not sure if itâs because of the milk you used or what went wrong
but you can always try again with more chia/less milk for a thicker consistency!

Looks delicious! But my daughter is low carb and diabeticâŠlooks delicious and I can swap the syrup for sugar free sweetener. Just want to make sure that this is something she can eat. SpecificallyâŠ.whatâs the carb count, also instead of coachâs powder, do you think that I could use protein powder, to up the protein count? Sorry so many questions! Thank you for sharing!
Thank you! Yes, definitely feel free to sub sugar-free sweetener. I donât have the exact carb count but without the maple syrup it is definitley low! Feel free to plug the recipe into a nutrition calculator like MyFitnessPal for an exact count.
You can use protein powder instead of cocoa powder but it may slightly change the texture depending on what kind of protein you useâ but will still be delicious! If your protein powder isnât chocolate-y enough, you can use both protein and the cocoa powder

I really love all of your baked oatmeal dishes so I decided to give the chia pudding a try. I made this today and itâs been in the fridge for over 4 hours but hasnât really gotten pudding-like. There was a definite separation between the chia seeds and the liquid. I mixed it very thoroughly in the jar before putting it in the fridge. Is this typical? I stirred the 2 layers together, but itâs still very liquidy. Thanks

Iâm so sorry youâre having trouble with this one! Depending on the type of milk you used, you may need slightly less or more. It sounds like you might need to use a little bit less to get that thicker âpuddingâ consistency. Otherwise, add some extra chia seeds and let it sit awhile longer. It can also help to stir one extra time while itâs setting ex. I will usually prep the recipe around 6pm and put it in the fridge and then stir it one more time before I go to bed around 8 or 9pm to make sure there are no clumps / separation, and then enjoy it for breakfast the next morning! I hope this helps, let me know!
Made this last night. Came out pretty yummy and chocolaty. Lots of fiber and calcium and protein about 9 grams. When I added all the ingredients to my calorie calculator it came out to about 300 for this base recipe. Add some toppings to give it more protein. Will be making this again
