I have been OBSESSED with “Scotcharoo’s” since I was a youngin’ (although I recently learned that not everyone calls them that) 🤣 so, if you dont know what Scotcharoo’s are, they are those peanut butter rice krispie-type treats with a chocolate layer on top and let me tell ya, they are LIFE CHANGING. Chocolate + peanut butter = forever my fave combo.

Last year, I randomly thought of Scotcharoo’s and realized it had been a couple years since I had them. Immediately, I drove to Whole Foods to pick up some cereal and chocolate chips. A few hours later, I had myself some homemade Scotcharoo’s that tasted just as good as I remember, but this time I could also FEEL good about eating them because I knew they were made with wholesome ingredients. Win, win!

For this recipe, I use Love Grown Power O’s (a cereal brand made with beans). Sounds strange, I know. But this cereal contains more protein, more fiber, less sugar, and leaves out all the yucky additives. And in this recipe, you can’t even tell the difference!

Orignally, I used Love Grown’s unflavored Power O’s but this time I could only find the Chocolate Power O’s. Both taste great in this recipe! You can really use any brand cereal that you prefer 🙂

I actually ate three bars this time throughout the process of making them and taking pictures. OOPS! But they are addicting! Quality control at its finest. You’ve been warned 😉

Chocolate Peanut Butter Cereal Bars (healthier Scotcharoo’s!)

Ingredients

For the bars

  • 3.5 cups cereal (I used Love Grown Power O's)
  • 3/4 cup peanut butter (only ingredients should be peanuts or peanuts and salt
  • 1/2 cup honey
  • 1 tsp vanilla extract

For the chocolate layer

  • 1.5 cups chocolate chips
  • 1 tbsp coconut oil

Instructions

  • Combine peanut butter, honey, and vanilla in a small pan over the stove on low heat. Or microwave in a bowl for 30 seconds.
  • Add cereal to a big mixing bowl and then pour peanut butter mixture over the cereal and stir until the cereal is evenly coated. 
  • Line an 8×8 baking dish with parchment paper and press the coated cereal into the dish. Set in the freezer while you melt the chocolate.
  • Add chocolate chips and coconut oil into a microwave safe bowl. Melt in 30 second intervals, stirring between each. 
  •  Pour melted chocolate over cereal and spread in an even layer.
  • Sprinkle with sea salt and set back into the freezer for at least 1 hour.
  • Cut into 16 squares and store in the refridgerator.
