If you haven’t tried making cheesecake with cottage cheese yet… what are you waiting for?? It’s no secret that this year cottage cheese recipes have been going viral and are super popular. If I come across one on social media, chances are that I’ve already tried it or I’ve saved it to try later! I’ve created some of my favorite high protein dessert recipes based on this viral ingredient and it’s especially perfect for cheesecake flavored treats like my High Protein Pumpkin Cheesecake, High Protein Mini Cheesecakes, and High Protein Cheesecake Ice Cream.

One of the best things about cheesecake is that it can be made with any flavors so it’s easy to satisfy a craving! Well, one day I was really wanting a sweet, fruity cheesecake and this single-serve recipe was created. The blended ingredients give this the perfect smooth, light texture that makes each bite melt in your mouth. I made this single-serve because when something is THIS good, I don’t love to share 😉

Besides being absolutely delicious, this treat packs in over thirty grams of protein between the egg, protein powder, and cottage cheese! With the balance of healthy fats, protein, and fiber-rich carbs you’ll be fuller longer, satisfied, and have more stable blood sugar. Making this a great snack, breakfast, or dessert choice!

What You’ll Need:

  • Cottage cheese – I use the full-fat one from Good Culture or Kalona Super Natural. I would say full-fat will have the best results!
  • Egg – For added protein and it really adds to the smooth, soft texture!
  • Vanilla protein powder – Lately I’ve been loving this vanilla one from Flavcity (discount code: CALLA20)
  • Blueberries – You can use either fresh or frozen for this! If berries aren’t in season, it would be cheaper and more fresh to buy frozen. I love Wyman’s frozen wild blueberries and they’re higher in antioxidants than regular blueberries!
  • Toppings of choice – I like to add nut/seed butter, banana slices, and a little cinnamon on top! Other ideas are whipped topping, Greek yogurt, more berries, chocolate chips, etc.)

How To Make

  1. Preheat oven to 350F and lightly spray an 8oz ramekin with oil.
  2. In a high-speed blender or food processor, add all ingredients and blend until smooth.
  3. Pour the mixture into the baking dish and bake for twenty-five minutes until it’s risen and slightly firm.
  4. Once baked, let the cheesecake slightly cool and then add your toppings of choice. (Tip: I love adding peanut butter, banana, and cinnamon on top of mine!)
  5. Enjoy!

  • 1 egg
  • 1 scoop vanilla protein powder

Instructions

  • Add everything to the cup of a high speed blender. Blend until completely smooth.
