These Mini Broccoli Pizza Bites are gluten free, low carb, and ready in only 30 minutes. Top them with your usual favorites and you have a veggie-filled bite-sized pizza alternative perfect for any pizza night!
I don’t know about you, but when I was younger I used to love those pizza bagel bites! I don’t love the ingredients list though and wanted to come up with a simple, healthier version that satisfied that craving while also making me feel my best. Plus, there’s just something about mini pizzas that’s so fun and I think they taste better… anyone else?
With all of the pizza alternative recipes I’ve been posting, these mini pizza bites were a top priority to make and one that was requested a lot! So, this is my take on a healthier, lower carb, vegetable packed version of those pizza bites we all know and love. What I love about this recipe is how easy it is to make – everything comes together in a food processor, it takes 30 minutes from start to finish, and the final product is AMAZING. The broccoli crust becomes golden, crisp, and adds a nice crunch to every bite. You can keep it simple or crazy with the toppings, but either way you can pack so much flavor into one mini pizza! They’re a great way to add more color and variety into your meals. You can also make the crust with cauliflower or use a combination of the two for more fiber (or if whoever is eating doesn’t want the green crust).

What You’ll Need
- Broccoli
- Eggs
- Almond flour – This flour from Bob’s Red Mill is my favorite because of how finely ground it is.
- Grated parmesan – You could also use dairy free cheese throughout this recipe.
- Herbs – I like to use oregano and Italian seasoning.
- Olive oil – any neutral oil will work too, I also love this Avocado oil.
- Toppings of choice – pizza sauce, marinara, chicken, red pepper flakes, etc.
Pizza Topping Ideas
- Classic – mozzarella cheese, pepperoni, oregano
- BBQ chicken – shredded chicken, bbq sauce, red onion, basil
- Buffalo chicken – shredded chicken, buffalo sauce, red onion, mozzarella cheese
- Pesto – pesto, mushrooms, arugula, tomatoes, balsamic drizzle
- White pizza – white sauce, spinach, mushroom, chicken or sausage, red pepper flakes
How To Make
- Preheat oven to 400F and line a baking sheet with parchment paper.
- Add all ingredients except for toppings to a food processor and pulse until evenly combined. (Tip: You may need to stop, mix, and pulse again. It should be mixed together with no larger broccoli pieces!)
- Scoop and form the mixture into a ball and place on the baking sheet in rows, leaving about two inches between each. Gently flatten each ball into a pizza crust shape.
- Cook in the oven for twenty minutes, until slightly browned along the edges.
- Top with pizza or marinara sauce and gently spread. Top with shredded mozzarella, a couple slices of pepperoni, and sprinkle with oregano. (Tip: For this step, add any pizza toppings you’re using. This is just an example used for this recipe!)
- Place the baking sheet back in the oven for about five to ten minutes until the cheese is melted or toppings are warmed.
- Let the pizzas cool for a couple of minutes to firm up and enjoy!

Ingredients

Instructions
- Preheat oven to 400F and line a baking sheet with parchment paper.
- Add all ingredients except toppings to a food processor, pulse until combined.
- Scoop and form the mixture into a ball and place on the sheet in rows. Leave about 2 inches between each. Gently flatten each ball into a crust shape.
- Bake for 20 min, until slightly brown along the edges.
- Add toppings and bake again for 5-10 min until cheese is melted or toppings are warmed.
- Let cool a couple of minutes to firm and enjoy!
