Making banana bread reminds me of lockdown when everyone was making it at least once a week (or more). Honestly, I loved the habit of baking a loaf to have prepped for a snack throughout my week. Out of all of the banana bread recipes I’ve tried though, I promise you this one is my favorite! It’s quickly become my go-to and I think it will be yours too.
There’s nothing better than a bread with a soft, moist, texture inside and a slightly crispy outside. Thanks to one special ingredient in this banana bread, that’s exactly what we get! That special ingredient is… cottage cheese! In this recipe, it isn’t the star of the show but it adds to the amazing texture of the bread while also providing healthy fat and protein.

What You’ll Need
- Banana – You’ll want really spotty bananas for this recipe since we aren’t adding sugar or much sweetener aside from the honey. This will make the bread naturally sweeter!
- Eggs
- Cottage cheese – Good Culture is my favorite and has the best consistency.
- Oat flour – You can buy premade flour or make your own by blending oats, I like to use One Degree Organic Gluten Free Oats!
- Honey
- Sea salt
- Baking soda
- Cinnamon
- Chocolate chips – Optional, but these are delicious mixed in and for topping!
How To Make
- Preheat oven to 350F and line a loaf pan with parchment paper.
- In a large bowl, mash the spotty bananas with a fork. Then add the cottage cheese and continue to mash until mixed. (Tip: If you want a smoother consistency and don’t mind using more than one bowl, you can blend the bananas and cottage cheese in a high speed blender until smooth.)
- Add the rest of the ingredients except chocolate chips and mix well. Since this is made in one bowl, we want to make sure that everything is fully combined!
- Stir in the chocolate chips (or other mix-ins like crushed nuts, blueberries, walnuts, etc.) and pour into the loaf pan. Top with extra chocolate chips.
- Bake for 40-45 minutes or until slightly golden. (Tip: Right when you take it out of the oven, while it’s still warm, sprinkle some flakey sea salt to help add some flavor!)
- Let it cool, slice, and enjoy!
