This Single-Serve Cottage Cheese Brownie is gluten free, low in sugar, and high in protein. It’s the perfect dessert to make when you’re craving a sweet, chocolatey brownie but don’t want to go through the process of making a full batch! This brownie is slightly underdone in the center making it like a lava cake and brownie all in one.
Regular brownies are delicious enough to enjoy as they are but I wanted to put together a recipe for anyone (like me) wanting to add more protein into their diet. These ingredients are used to give this recipe the gooey rich chocolatey texture of everyone’s favorite brownie while also providing a good balance of healthy fats and protein. I was skeptical of turning cottage cheese into a brownie at first, but I’m now totally a fan. This might just be your new nightly dessert too!

What You’ll Need
- Cottage cheese – Good Culture is my favorite for the consistency and quality. They have a lactose-free version too!
- Chocolate protein powder – This adds extra chocolate flavor AND packs in the protein, it’s a win-win. Truvani is my current favorite.
- Cocoa powder – or cacao powder.
- Maple syrup
- Sea salt
- Baking powder
- Almond milk – I use homemade almond milk but a great store-bought option is Malk because there are no additives are fillers! You can use any dairy free milk or regular milk too.
- Chocolate chips – These add texture and crunch to the brownie so use as much as you like! I love Lily’s Dark Chocolate for a lower sugar option or Hu Gems are always amazing.
How To Make
- Add all of your ingredients except for the almond milk to a microwave-safe dish (like this one). Stir to combine.
- Slowly add in the almond milk until you reach a very thick batter consistency, stirring until everything is mixed and the batter thickens.
- Microwave for one minute. The brownie should be slightly firm but still a little gooey, especially in the center. Option to top with a drizzle of chocolate, some ice cream, or coconut cream, and enjoy!
Tip: you’ll want to make sure that the dish you use is large enough to prevent spillage when cooking, the brownie batter will rise in the microwave! Make sure there’s room at the top or use a slightly larger container.

This turned into more like a pudding than a brownie for me!
Mine too! I added some flour and a little bit of sugar (the cacao was a little too pronounced for me), popped it back into the microwave for 45 seconds, and it worked!
