Single Serve Berry Crisp

This Single Serve Berry Crisp is SO easy to make, only calls for a few ingredients, and is vegan, gluten-free, and refined sugar-free.

To be honest with you, I am usually not a huge fruit-y dessert kinda gal. With that being said, I LOVE a good crisp! Apple crisp, berry crisp, peach crisp basically anything that involves warm, caramelized, sweet fruit with scoop of vanilla ice cream on top… DELISH!

So if you are one of those people who lean more toward the vanilla-y, chocolate-y, peanut buttery, caramely (okay, you get it)… just trust me on this one! You will become addictedβ€” and hey, it’s not a bad addiction to have since it is packed with nutrients and fiber from the berries, complex carbohydrates from the oats, and healthy fats from the coconut oil and almond flour. It’s been my fave post-dinner summer treat to enjoy while my husband and I watch some TV or a movie!

You can even make this in advance if you’re like me and like to get STRAIGHT to the couch and dessert after dinner. I’ve made a few at a time before and just keep them in the fridge when I’m ready to enjoy. They taste amazing cold or reheated and dare I say, they even get a little BETTER after sitting in the fridge for a day or two πŸ˜‰

What you need to make Single Serve Berry Crisp:

  • berriesβ€” I used 1/2 strawberries and 1/2 blueberries. I typically go for fresh in this recipe but frozen will work as well!
  • maple syrupβ€” just a small amount to really bring out the sweetness in this recipe!
  • tapioca starchβ€” cornstarch and arrowroot flour are interchangable here.
  • oatsβ€” I typically use rolled oats.
  • almond flourβ€” you can swap in oat flour, gluten-free flour, or your preferred flour here.
  • cinnamon
  • sea salt
  • coconut oilβ€” feel free to use butter or vegan butter instead of coconut oil.

Single Serve Berry Crisp

Ingredients

For the berries

  • 1 cup berries (make sure to dry FULLY after washing if using fresh berries)
  • 1 tsp maple syrup
  • 1 tsp tapioca starch (cornstarch or arrowroot will work here as well)

For the crisp

  • 2 tbsp oats
  • 2 tbsp almond flour
  • 2 tsp maple syrup
  • Few shakes cinnamon
  • 1 pinch sea salt
  • 1/2 tbsp coconut oil (softened)

Instructions

  • Preheat oven to 350F and lightly grease an oven-safe baking dishβ€” I use an 8 oz ramekin.
  • Mix together berry mixture ingredients and pour into baking dish. Bake for 15 minutes.
  • While your berries are baking, mix together crisp topping.
  • Top berries with crisp and bake for another 10 minutes.
  • Optional – serve with a scoop of ice cream or whipped cream!
