Chocolate Peanut Butter Cereal Bars (healthier Scotcharoo's!)

Ingredients

For the bars

  • 3.5 cups cereal (I used Love Grown Power O's)
  • 3/4 cup peanut butter (only ingredients should be peanuts or peanuts and salt
  • 1/2 cup honey
  • 1 tsp vanilla extract

For the chocolate layer

  • 1.5 cups chocolate chips
  • 1 tbsp coconut oil

Instructions

  • Combine peanut butter, honey, and vanilla in a small pan over the stove on low heat. Or microwave in a bowl for 30 seconds.
  • Add cereal to a big mixing bowl and then pour peanut butter mixture over the cereal and stir until the cereal is evenly coated. 
  • Line an 8x8 baking dish with parchment paper and press the coated cereal into the dish. Set in the freezer while you melt the chocolate.
  • Add chocolate chips and coconut oil into a microwave safe bowl. Melt in 30 second intervals, stirring between each. 
  •  Pour melted chocolate over cereal and spread in an even layer.
  • Sprinkle with sea salt and set back into the freezer for at least 1 hour.
  • Cut into 16 squares and store in the refridgerator.
