Gingerbread Energy Balls (paleo + vegan)

Ingredients

  • 1/2 cup almond butter (only ingredient should be almonds or almonds and salt)
  • 2 tbsp coconut flour
  • 2 tbsp molasses
  • 2 tbsp coconut sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp ginger
  • couple shakes nutmeg
  • couple shakes allspice
  • dash sea salt

Instructions

  • In a medium sized bowl, mix almond butter, molasses, coconut sugar, and vanilla extract.
  • In a small bowl, combine remaining ingredients. Add these to your wet ingredients and mix well. Consistency should be similar to cookie dough (see pic above). Set in the freezer for 15 minutes, this will make it easier to roll into balls!
  • Take your bowl out of the freezer and roll dough into balls, about a heaping tablespoon each. Set back onto a plate or tray and back into the freezer for 30 minutes. Option to roll each ball in cinnamon sugar, hemp seeds, chia seeds, or whatever else you can think of! :)
