Healthy Thin Mint Cookies (Gluten Free, Vegan)

Ingredients

cup
almond butter
(+ 2 tbsp) (or cashew butter)
1/4
cup
almond flour
2
tbsp
honey
(maple syrup for vegan)

tbsp
cocoa powder
2-3
drops
peppermint oil
Chocolate Coating
1/2
cup
chocolate chips
1
spoonful
coconut oil
Instructions
Mix together all ingredients (except chocolate chips & coconut oil).
Scoop out batter and roll into balls. Place on a parchment paper-lined tray.
Freeze for at least 2 hours.
To make chocolate coating, melt chocolate chips and coconut oil in the microwave at 30 seconds, stir, and repeat until smooth.
Once cookies are set, dip each into the chocolate coating.
Place in the freezer again until fully set and enjoy!
