These healthy thin mint cookies are gluten free, vegan, paleo, low sugar, no bake, and easy. On a white plate there is a pile of round chocolate cookies that are a rich brown color. One is split in half to show the texture and crunch. The inside is slightly chewy, smooth with a hard chocolate outside. Perfect thin mints for meal prep and dessert

Healthy Thin Mint Cookies (Gluten Free, Vegan)

Ingredients

  • 1/4 cup almond butter (+ 2 tbsp) (or cashew butter)
  • 1/4 cup almond flour
  • 2 tbsp honey (maple syrup for vegan)
  • 1 tbsp cocoa powder
  • 2-3 drops peppermint oil

Chocolate Coating

  • 1/2 cup chocolate chips
  • 1 spoonful coconut oil

Instructions

  • Mix together all ingredients (except chocolate chips & coconut oil).
  • Scoop out batter and roll into balls. Place on a parchment paper-lined tray.
  • Freeze for at least 2 hours.
  • To make chocolate coating, melt chocolate chips and coconut oil in the microwave at 30 seconds, stir, and repeat until smooth.
  • Once cookies are set, dip each into the chocolate coating.
  • Place in the freezer again until fully set and enjoy!
