Quick & Easy Blueberry Crisp (Gluten Free, Vegan)

Ingredients

Blueberry Filling

  • 6 cups Blueberries (3 pints)
  • 1/4 cup Honey (or maple syrup)
  • 1 tbsp Lemon
  • 1/4 cup Arrowroot starch (or cornstarch, tapioca starch)

Crisp

  • 1/2 cup Oat flour
  • 3/4 cup Oats
  • 1/2 cup Brown sugar
  • 5 tbsp Butter (or vegan butter, coconut oil)
  • Cinnamon (to taste)
  • Sea salt (sprinkle)

Instructions

  •  Preheat oven to 350F.
  • Wash and dry blueberries, fully.
  • Mix blueberry filling ingredients in a bowl and pour into a lightly greased baking dish.
  • In another bowl, mix together crisp ingredients. Scoop evenly on top of blueberry mixture.
  • Bake for 40-45 mins. Let cool completely! 

Option to serve with your favorite vanilla ice cream or coconut cream
