Homemade Sweetgreen Cashew Dressing (Gluten Free, Dairy Free)

Ingredients

  • 2 small garlic cloves
  • 2 small knobs of fresh ginger, peeled
  • 1 cup cilantro
  • 1 tsbp sesame oil (or olive oil, avocado oil)
  • 2 tbsp maple syrup
  • 2 tbsp rice vinegar
  • 1 tbsp red chili flakes (less if you want more mild)
  • 1/3 cup + 2 tbsp cashew butter
  • 1 tbsp lime juice
  • 2 tsp salt
  • 1/4 cup water

Instructions

  • Add all ingredients to your blender and blend until fully combined, smooth, and creamy.
  • Store in an airtight container in the fridge. It will thicken as it sits in the fridge but just add more water as needed.
