Pumpkin Spice Protein Bars

Ingredients

  • 1/2 cup oats
  • 1/2 cup vanilla protein powder
  • 1/3 cup ground flaxseed
  • 3 tbsp chia seeds
  • 1 tsp pumpkin spice
  • 1 pinch sea salt
  • 1/2 cup pumpkin puree
  • 1/3 cup nut butter
  • 2 tbsp coconut oil (melted)
  • 3 tbsp honey

Instructions

  • Mix all ingredients together super well so that they are fully combined. 
  • Press dough into a parchment paper-lined loaf pan.
  • Top with melted white chocolate (see instructions below).
  • Freeze for at least 2-3 hours before slicing.

For the white chocolate topping

  • Melt 1/2 cup white chocolate chips and 1 heaping teaspoon of coconut oil in 20 second intervals in the microwave, stirring between each.
