Single Serve Berry Crisp

Ingredients

For the berries

  • 1 cup berries (make sure to dry FULLY after washing if using fresh berries)
  • 1 tsp maple syrup
  • 1 tsp tapioca starch (cornstarch or arrowroot will work here as well)

For the crisp

  • 2 tbsp oats
  • 2 tbsp almond flour
  • 2 tsp maple syrup
  • Few shakes cinnamon
  • 1 pinch sea salt
  • 1/2 tbsp coconut oil (softened)

Instructions

  • Preheat oven to 350F and lightly grease an oven-safe baking dish— I use an 8 oz ramekin.
  • Mix together berry mixture ingredients and pour into baking dish. Bake for 15 minutes.
  • While your berries are baking, mix together crisp topping.
  • Top berries with crisp and bake for another 10 minutes.
  • Optional - serve with a scoop of ice cream or whipped cream!
