Healthy Cowboy Caviar

(rinsed and drained)

(diced and seeded)

(I used frozen)

red bell pepper

(diced)

cilantro
(finely chopped)
For the dressing
1/4
cup
olive oil
1/4
cup
vinegar
(I used apple cider vinegar)
juice of 1 lime

tbsp
honey

tsp
chili powder

tsp
cumin
sea salt
to taste
Instructions
Add all ingredients to a large bowl and toss.
Add all dressing ingredients to a bowl or jar and stir/shake until fully combined.
Pour dressing over salad and enjoy! It gets even better after it sits in the fridge for a day or two :)
