Vegan Ricotta Toast

Ingredients

For the vegan ricotta

  • 1 cup PB2 Cashew Powder
  • 1/4 cup oil
  • 1/4 tsp garlic powder
  • 1 tbsp lemon juice (the juice of about 1/2 small lemon)
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 2 tbsp nutritional yeast

For the toast

  • sourdough bread (or bread of choice)
  • 1 peach sliced
  • honey for drizzling
  • pistachios crushed

Instructions

  • Add all vegan ricotta ingredients to a bowl and mix until fully combined.
  • Spread vegan ricotta onto toasted bread. Add sliced peaches, drizzle honey, and top with crushed pistachios. Enjoy!
