Chocolate Chip Banana Baked Oatmeal Cups

Ingredients

  • 2 bananas (spotty bananas work best)
  • 2 eggs
  • 1 cup milk (I use cashew or oat)
  • 2 cups oats
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/2 tsp sea salt
  • 1 tsp baking soda
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350F. Mash bananas with a fork in a large bowl.
  • Add the rest of you ingredients (except chocolate) and mix well.
  • Fold in chocolate chips.
  • Scoop about 1/3 cup batter into each muffin tin and flatten out the top with a spoon.
  • Bake for 30 min and add sea salt on top.
