1/2tspapple cider vinegar(lemon juice will work too)

Instructions
Preheat oven to 350F and line 12 muffins tins.
Peel and then dice apples (peeling is optional but dice the apples pretty small!)
Add all ingredients (include 1 diced apple but save the other diced apple to stir in after blending) to a high speed blender or food processor. Blend until fully combined (you may have to scrape the sides a couple of times).
Stir in remaining apples.
Spoon batter into each lined muffin tin. Smooth out the top of each muffin with a spoon or small spatula.
