Servings: 1
Ingredients
2/3cupkefir (I recommend organic whole milk kefir, I use the brand Lifeway)
2tbspchia seeds
1-1.5cupscherries (pitted and stems removed)
Instructions
Add chia seeds and kefir to a jar with a tightly secured lid. Shake vigorously and set in the fridge overnight or for at least 1 hour.
Add cherries to a pan over the stovetop on medium heat. Once the cherries start to warm up, mash them with a fork or potato masher. Continue cooking and stirring until the mixture starts to bubble. You can do this step the night before and then store in a container in the fridge or right before you are planning to eat your chia pudding.
Layer chia pudding and no sugar-added cherry jam. Option to top with more cherries, almond butter, bee pollen, or anything else your heart desires!
