Peanut Butter Chocolate Chip Oatmeal Cookies

Ingredients

  • 1 cup oats
  • 1/2 cup oat flour*
  • 1 cup peanut butter (only ingredient should be peanuts or peanuts and salt)
  • 2 eggs
  • 1/4 cup coconut sugar (can sub any kind of sugar)
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • pinch sea salt
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350F. Line a baking sheet with parchment paper and set aside.
  • Mix together peanut butter, eggs, coconut sugar, maple syrup, and vanilla. The consistency will be similar to a thick caramel.
  • Whisk in the rest of your ingredients except for the chocolate chips.
  • Stir in chocolate chips.
  • Using a cookie scoop or a spoon, scoop out about 1 heaping tablespoon for each cookie dough ball. Roll into balls and set onto baking sheet.
  • Flatten each cookie dough ball using the bottom of your palm. You want to flatten them quite a bit because they don't flatten very much on their own when baking. Top with additional chocolate chips and sea salt.
  • Bake for 7-10 minutes. Let cool completely before removing them from the tray.
