1/2cupalmond butter(natural– only ingredients should be almonds or almonds and salt)
3/4cupcoconut sugar (cane sugar works too)
1egg
1tspvanilla extract
1/2tspbaking soda
sprinklesea salt(plus more for topping)
1 chocolate bar of choice
Instructions
Preheat oven to 350F. Line a baking sheet with parchment paper. Finely chop your chocolate bar and set aside.
Whisk together coconut sugar, almond butter, egg, and vanilla in a large bowl. You could also use a stand mixer.
In a smaller bowl, mix together almond flour, baking soda, and salt.
Add your dry ingredients to your wet ingredients and mix until fully combined (see above photo for consistency). Mix in chocolate chunks (save some for topping).
Using a cookie scoop or spoon, scoop out about one heaping tablespoon per cookie. Roll into balls. Slightly flatten each ball with the bottom of your palm. Top with extra chocolate and a sprinkle of sea salt.
Bake for 7-10 minutes or until edges start to slightly brown. Once you remove cookies from the oven, let them sit on the baking tray for at least 5-10 minutes to set.
