This Viral High Protein Ground Beef Bowl is gluten free, low carb, and nutrient-dense. There’s a reason this is all over the internet right now! This bowl is the most delicious blend of savory, sweet, warm, cool, and even packs a little spice. With so many textures and flavors in one bowl, it checks all of the boxes and might just be the perfect meal!
I’m sure you’ve seen some version of the ground beef bowl that’s going viral online right now. I was pretty skeptical when I saw it at first, it seemed like a bunch of delicious things that shouldn’t necessarily be put together. But like most viral trends, I tried it to see if it was worth the hype and I was SO wrong to have second guessed this! I’ve tried a lot of variations since that first time and am now sharing my own (and favorite 💁♀️) for you to try. If you’re looking for an easy, effortlessly delicious, nutrient-dense, and high protein meal, this is it!
I’ve had this on repeat and it’s great for meal prep because I can make everything once and have at least three or four servings that I can reheat during the week. While every version of this viral recipe has a slight difference, the main reason this bowl is amazing is for the blend of flavors and textures. The warm vegetables, spicy ground beef, topped with cooling avocado, cottage cheese, and a drizzle of honey for sweetness is unmatched. For my favorite version, we’re roasting sweet potatoes and green beans for the base, seasoning ground beef with taco seasoning, and topping with cottage cheese, avocado, honey, and a bit of hot sauce for an extra kick. If I’m meal prepping some things for the week, I’ll make sure to add this to the list. I’ll store each ingredient separately so I can choose what I want to put together when it’s meal time. You can also store everything together in one bowl and add you’re toppings when you’re ready to eat! I also love this for nights after a long day where I don’t want to think about what to make but know I need something easy, nutritious, and just as tasty. Having leftovers for a couple of days is always a win!

What You’ll Need
- Sweet potato – Any color of sweet potato will work for this, I just used orange sweet potato because that’s what I had and can easily find. Japanese or purple sweet potato would be delicious and change up the flavor.
- Green beans
- Ground beef – You can also use ground turkey or chicken for this recipe.
- Taco seasoning – Check ingredients if buying a pre-made taco seasoning, they like to sneak in sugars and fillers. That’s why I prefer Siete, my favorite right now is this beef fajita seasoning.
- Cottage cheese – My favorite is from Good Culture for the flavor and quality. Use as much or as little for each serving as you want!
- Avocado – For more healthy fats and cooling texture.
- Honey – This is what adds the sweetness to the savory bowl and part of what makes it so good!
- Hot sauce – Optional, but I love having a little spice on mine. My favorite is this Truff hot sauce.
- Salt & pepper
How To Make
- Preheat the oven to 400F and line two baking sheets with parchment paper.
- Wash and remove the skin from one large sweet potato with a peeler.
- Slice the potato into cubes and place on one baking sheet. Drizzle with olive oil, salt, and bake for 45 minutes.
- On the other baking sheet, add green beans and drizzle with olive oil, salt, pepper, and bake for 35-40 minutes.
- While the vegetables are baking, in a pan on the stovetop, brown the ground beef over medium heat until fully cooked through.
- Add the packet of taco seasoning and mix into the meat, letting it cook a bit more.
- Once everything is cooked, assemble your bowl. Add sweet potato, roasted green beans, ground beef. Top with cottage cheese, sliced avocado, a drizzle of honey, and an optional drizzle of hot sauce. Enjoy!

Ingredients

Instructions
- Preheat the oven to 400F and line a baking sheet with parchment paper.

- Once everything is finished cooking, assemble your bowl. Add sweet potato, roasted green beans, ground beef and top with cottage cheese, sliced avocado, a drizzle of honey, and optional drizzle of hot sauce. Enjoy!
