The Best Cobb Salad (Gluten Free)

As it’s getting warmer out, my body is craving more salad! Luckily, they’re pretty easy to throw together, replicate, and switch up with the help of different ingredients and dressings.

This is THE BEST cobb salad, based on one that I love to order. It’s packed with healthy fats, carbs, and protein for a balanced salad that will keep you fuller for longer! The star of the meal is the homemade jalapeno ranch dressing 🤩 It’s so creamy, adds a nice kick, and is easy to blend together. Who said salads were boring??

What You’ll Need For The BEST Cobb Salad:

  • Mixed greens or romaine lettuce
  • Avocado
  • Chicken – or protein of choice.
  • Sun-dried tomatoes
  • Hard-boiled egg
  • Kalamata olives
  • Bacon – I look for pasture-raised, no sugar added!
  • Pickled red onions
  • Blue cheese – I use Organic Valley!

How To Make:

Start by preparing your chicken, bacon, and hard-boiled eggs. Once they’re done, slice the chicken and hard-boiled eggs. Dice up the bacon into bits.

In a bowl or plate, add all of your salad ingredients – start with placing the mixed greens and add the rest! Option to make it as pretty as you want 😉

After the base of your salad is made and plated, start on your dressing. Add the ranch ingredients to a high-speed blender and blend until fully combined and creamy. Drizzle on top of your salad and enjoy!

Ingredients

  • mixed greens or romaine
  • avocado
  • chicken
  • sun-dried tomatoes
  • hard-boiled egg

Jalapeno Ranch

  • 1/4 cup avocado oil mayo
  • 3/4 cup full fat Greek yogurt
  • 1 jalapeno (seeded)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 lime (juiced)
  • 1-2 tbsp fresh dill

Instructions

  • Prepare chicken, bacon, and hard-boiled egg.
  • Place all salad ingredients in a bowl or plate.
  • Add all ranch ingredients to a high-speed blender. Blend until fully combined and smooth.
  • Drizzle some of the ranch on your prepared salad. Enjoy!
