Peanut Butter Chocolate Chip Cookies for Two (gluten-free + vegan)

I love a good single serve recipe and these Peanut Butter Chocolate Chip Cookies are at the top of my list! They are gluten-free, grain-free, refined sugar-free, vegan, and SO easy to make.

All you need are 3 main ingredients— oats, peanut butter, and sugar. You will also need vanilla extract, baking soda, chocolate chips, and salt… but everyone has those on hand— right?! 😉

This recipe serves one or two. Usually I eat both cookies myself but they are dense so one is pretty satisfying! I love single-serve recipes because I am always craving something sweet in the afternoon and after dinner and sometimes I don’t have the time or energy for the production of a whole recipe. This recipe is perfect for those days!

What you need…

  • oat flour: can be made my blending oats until you reach a flour-like consistency or you can buy oat flour at the store. Either way it is the cheapest gluten-free flour and easy to work with.
  • peanut butter: I always look for brands with one ingredient— peanuts! Or peanuts and salt. I love a good salty peanut butter!
  • coconut sugar: you can sub in regular sugar but note it will not be refined sugar-free. You could also swap monkfruit for coconut sugar if you are looking for a sugar-free option.
  • vanilla extract
  • baking soda
  • chocolate chips: I always use the allergen friendly chips such as Enjoy Life Foods or Tollhouse Simply Delicious. These are vegan and also preservative/additive free.
  • salt! There is no good cookie without salt.

Peanut Butter Chocolate Chip Cookies (for two)

Ingredients

  • 2 tbsp oats (or oat flour)
  • 3 tbsp peanut butter
  • 2 tbsp coconut sugar
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking soda
  • chocolate chips
  • sea salt

Instructions

  • Preheat oven to 350F.
  • Blend oats to make oat flour.
  • Add all ingredients except chocolate chips and salt to a bowl and mix well.
  • Separate dough into 2 parts and roll into balls.
  • Place each cookie dough ball on a parchment paper lined baking sheet and flatten.
  • Add chocolate chips and bake 8-10 min. Top with sea salt and enjoy!
