PB&J Baked Oatmeal

Baked oatmeal is definitely my favorite way to eat oats! By baking the oats instead of microwaving or cooking them on the stovetop, you create a cakey muffin-like texture that is super delicious!

This peanut butter and jelly baked oatmeal brings back all of my childhood feels when PB&J was a daily staple! It is simple to make, healthy, and low sugar!

I used homemade chia jam in place of storebought jelly in order to keep added sugar minimal and also incorporate some healthy fiber from the chia seeds!

PB&J Baked Oatmeal

Ingredients

  • 1/3 cup oats
  • 1 tsp chia seeds
  • 1 tbsp peanut butter
  • 1/2 scoop vanilla protein powder
  • 1/3 cup milk of choice (I used coconut milk)
  • 3-4 tbsp water
  • pinch sea salt
  • 1/4 tsp baking soda
  • jam or jelly of choice

Instructions

  • Mix all ingredients (except jam) in a bowl.
  • Pour about 2/3 oat mixture into oven safe baking dish, add a big spoonful of jam, and then the rest of the oat mixture.
  • Top with more jam and bake at 350F for 25 minutes.
  • Add toppings of choice. I added a little bit more peanut butter, crushed peanuts, and bee pollen.
