Paleo Chocolate Chunk Cookies

You have been warned– these Paleo Salted Chocolate Chunk Cookies are DANGEROUSLY delicious. I have already gone through five or six batches since the first time I made them 😂 they are gluten-free, dairy-free, grain-free, and refined sugar-free but flavor FULL. They come together with just five main ingredients and hardly any time or mess!

I looooveeee cookies. They are my absolute favorite dessert, so it’s about dang time I made my own recipe to share with you guys! One of the main reasons I wanted to make my own recipe was because every time I looked for a paleo chocolate chip cookie recipe online, the recipe was too overly complicated for me. Many of the recipes I came across called for 2-3 different types of flour, multiple sweetners, too many different ingredients, letting the dough chill for hours, etc. Either that, or they didn’t turn out how I wanted. Some weren’t sweet enough, some baked oddly, and just didn’t compare to classic chocolate chip cookies.

But THESE. These remind me of my childhood! They are sweet enough without giving me a major sugar rush, perfectly chewy on the inside, slightly crispy around the edges, and the sea salt gives them the best sweet + salty touch. And to make them even better? They are made with ingredients that make me feel amazing! Filled with healthy fat, fiber, and even some protein, these are perfect for not only dessert, but any time of the day!

For this recipe you will need…

  • almond flour
  • almond butter
  • coconut sugar
  • an egg
  • sea salt
  • baking soda
  • vanilla extract
  • chocolate bar of choice (make sure it is paleo-friendly if you are strict paleo!)
This is what the consistency of your dough will look like before adding chocolate chunks. Slightly sticky but easy to work with!
Slightly flatten the top of each cookie dough ball. Top with more chocolate and a sprinkle of sea salt.

Paleo Salted Chocolate Chunk Cookies

Ingredients

  • 1 cup almond flour
  • 1/2 cup almond butter (natural– only ingredients should be almonds or almonds and salt)
  • 3/4 cup coconut sugar (cane sugar works too)
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking soda
  • sprinkle sea salt (plus more for topping)
  • 1 chocolate bar of choice

Instructions

  • Preheat oven to 350F. Line a baking sheet with parchment paper. Finely chop your chocolate bar and set aside.
  • Whisk together coconut sugar, almond butter, egg, and vanilla in a large bowl. You could also use a stand mixer.
  • In a smaller bowl, mix together almond flour, baking soda, and salt.
  • Add your dry ingredients to your wet ingredients and mix until fully combined (see above photo for consistency). Mix in chocolate chunks (save some for topping).
  • Using a cookie scoop or spoon, scoop out about one heaping tablespoon per cookie. Roll into balls. Slightly flatten each ball with the bottom of your palm. Top with extra chocolate and a sprinkle of sea salt.
  • Bake for 7-10 minutes or until edges start to slightly brown. Once you remove cookies from the oven, let them sit on the baking tray for at least 5-10 minutes to set.
