Neapolitan Overnight Oats

These Neapolitan Overnight Oats are so fun, delicious, and healthy! This recipe may seem tedious but it is actually super simple and the perfect meal prep option.

This overnight oat recipe is gluten-free (make sure your oats are gluten-free if needed!), low sugar, can easily be made dairy-free/vegan, and is FULL of flavor!

So, if you are wondering why these overnight oats are called “neapolitan”, this recipe was inspired by the ice cream flavor that we always had stocked at my house growing up. One gallon of ice cream that included the flavors strawberry, chocolate, and vanilla!

For whatever reason, growing up I only liked the vanilla so there would always be a third of the carton missing 😂 which of the flavors was your favorite growing up? Or were you a normal child who enjoyed all three together like whoever came up with the neapolitan ice cream flavor intended?

While writing this blog post, I actually began to think— where did the name neapolitan come from for is tri flavored ice cream? Thought I’d share the answer below… you learn something new every day 😉

ANYWAYS, if you don’t love the flavor Neapolitan (like I didn’t as a child)— you can totally still make this recipe and eat each of the flavors separately. They are equally as amazing on their own!

What you need for the base:

  • oats: I used rolled but any oats you have on hand should work (except steel cut— those typically don’t work well in overnight oat recipes. Gluten-free if needed.
  • milk: I typically use almond, cashew, oat, or coconut. Feel free to use whatever milk you prefer!
  • yogurt: I love using greek yogurt for a little added protein but if you are sensitive to dairy or vegan— any non-dairy yogurt works just as well. I would go for unflavored/unsweetened.
  • salt: all good oatmeal recipes need salt— trust.
  • sweetener: I would go for maple syrup or honey.

And that’s it for the base! Now here’s where we get fancy (but still keep things extremely simple 😜)

For the flavorings:

  • vanilla extract: we’ll just add a dash of this to create a nice vanilla flavor.
  • cocoa or cacao powder: unsweetened. This is what we will use to make the chocolate flavor!
  • strawberry puree: simply blend fresh strawberries in a blender until you reach a smooth consistency. You can also swap this out for your favorite strawberry jam.

Neapolitan Overnight oats

Ingredients

  • 1 cup oats
  • 1 cup milk of choice
  • 1/4 cup yogurt (regular, greek, or vegan)
  • dash sea salt
  • 2 tbsp honey (or maple syrup or sweetener of choice)
  • 1/2 tsp vanilla extract
  • 1 tbsp cocoa powder
  • 1/4 cup strawberry puree (about 4-5 large strawberries— blended)

Instructions

  • Add oats, milk, yogurt, salt, and honey to a container. Stir and set in the fridge for at least 2 hours to thicken.
  • Separate the oats into 3 bowls or containers (about 1/3 cup each).
  • Add vanilla extract to the first, cocoa powder to the second, and strawberry purée to the third. Stir mixture in each bowl until well combined.
  • Layer oats in a cup or jar and enjoy!
